- Suppliers and Stock Management across all aspects of the business
- Regular Menu Design in line with seasonal ingredients and cost of goods targets
- Cost of Goods Management
- Management of Beverage Offering
- Wage Cost Management, including staff rosters
- Staff Management
- Staff Training – kitchen, front of house and housekeeping
- Front office Management
- Accommodation Management (including yield management and housekeeping)
